heal.abstract | The sub-pasteurization treatment at 63 . G for 60 sec was applied to raw ewe's milk, before or after its cold storage at 3-4 degrees C for 72 h, used in Feta cheese manufacture. Cheeses produced from cold stored milk, regardless of having or not undergone the sub-pasteurization treatment, did not exhibit any significant (P>0.05) difference in composition, proteolysis (TCA-SN and PTASN), lipolysis (ADV), organoleptic and textural characteristics in comparison with the control cheese (made from non-refrigerated milk). In 2 of the 4 trials, Feta cheese made from cold stored milk which had not undergone the sub-pasteurization treatment exhibited organoleptic deterioration during storage as compared to the control cheese. In these cases, the application of the sub-pasteurization treatment before the cold storage of milk gave Feta cheese of similar quality to that of the control cheese, while when applied after the cold storage this slightly improved the quality of these cheeses. | en |
