| heal.abstract | Η παρούσα πτυχιακή εργασία εξετάζει διεξοδικά την καλλιέργεια εδώδιμων μανιταριών στην Ελλάδα, εστιάζοντας τόσο στις βιολογικές όσο και στις τεχνολογικές και οικονομικές της διαστάσεις. Αρχικά, αναλύεται η βιολογία των μυκήτων, με έμφαση στους μηχανισμούς αναπαραγωγής και στον βιολογικό κύκλο των ασκομυκήτων και βασιδιομυκήτων, που αποτελούν τις σημαντικότερες κατηγορίες εδώδιμων ειδών. Στη συνέχεια, παρουσιάζονται οι σύγχρονες τεχνικές καλλιέργειας για τους πιο διαδεδομένους τύπους, όπως ο Agaricus bisporus και τα είδη του γένους Pleurotus, εξετάζοντας τους παράγοντες που επηρεάζουν την ανάπτυξη του μυκηλίου, τις απαιτήσεις του υποστρώματος και τις μεθόδους καλλιέργειας. Ιδιαίτερη μνεία γίνεται και στην καλλιέργεια της τρούφας, η οποία παρουσιάζει σημαντικές δυνατότητες εμπορικής ανάπτυξης. Η εργασία αναφέρεται επίσης στις διαδικασίες συγκομιδής, συσκευασίας και διακίνησης, καθώς και στην ανάλυση κόστους μιας μονάδας καλλιέργειας, με έμφαση στις καλλιέργειες Agaricus και Pleurotus. Παράλληλα, εξετάζονται οι δυνατότητες μικρής κλίμακας ή οικιακής παραγωγής, που μπορεί να αποτελέσουν συμπληρωματική ή καινοτόμα επιχειρηματική δραστηριότητα. Τέλος, διερευνώνται οι προοπτικές ανάπτυξης του κλάδου στην Ελλάδα, με πρόβλεψη αυξανόμενης ζήτησης τόσο για τα παραδοσιακά όσο και για νέα είδη μανιταριών, λόγω της στροφής του κοινού προς πιο υγιεινές και θρεπτικές διατροφικές επιλογές. Η συνολική μελέτη αναδεικνύει τις δυνατότητες του τομέα να συμβάλει τόσο στη διαφοροποίηση της αγροτικής παραγωγής όσο και στην ενίσχυση της τοπικής οικονομίας. | el |
| heal.abstract | This thesis provides a comprehensive study of the cultivation of edible mushrooms in Greece, focusing on their biological, technological, and economic aspects. It begins with an analysis of fungal biology, emphasizing reproduction mechanisms and the life cycle of ascomycetes and basidiomycetes, which represent the most important categories of edible species. Subsequently, modern cultivation techniques are presented for the most widely grown mushrooms, such as Agaricus bisporus and Pleurotus species, highlighting the factors that influence mycelium development, substrate requirements, and cultivation methods. Special reference is also made to truffle cultivation, which holds significant commercial potential. The study further examines the processes of harvesting, packaging, and distribution, alongside a cost analysis of a mushroom cultivation unit, with particular focus on Agaricus and Pleurotus. Additionally, the potential of small-scale or household cultivation is explored as an alternative or complementary entrepreneurial activity. Finally, the thesis investigates the prospects for the development of mushroom cultivation and marketing in Greece, forecasting increasing demand for both traditional and emerging species, driven by growing public awareness of their nutritional value.
