| heal.abstract | Τα τελευταία χρόνια, οι καταναλωτές στρέφουν το ενδιαφέρον τους ολοένα και περισσότερο στην συνολική πορεία ενός κρέατος, δηλαδή από την πρωτογενή παραγωγή ως την κατανάλωση του και στην ανησυχία για την ποιότητα της ζωής και την ευζωία των ζώων. Ευζωία ορίζεται ως η ικανότητα ενός ζώου να μπορεί να βρίσκεται σε καλή ψυχική και σωματική κατάσταση, κατά την προσπάθεια του προσαρμογής σε συγκεκριμένο περιβάλλοντα χώρο, καθώς επίσης και με την ικανότητα του να εκφράζεται και να συμπεριφέρεται ελεύθερα και φυσιολογικά. Γι’ αυτό το λόγο, οι παραγωγοί προσπαθούν να λάβουν μέτρα έτσι ώστε το περιβάλλον διαβίωσης των ζώων να είναι όσο το δυνατόν πιο άνετο και φιλικό για αυτά. Ένας άλλος σημαντικός χώρος όπου πρέπει να λαμβάνεται υπόψιν η σωστή ευζωία των αγροτικών ζώων είναι το σφαγείο και ο χώρος αναμονής, καθώς επίσης και το όχημα με το οποίο μεταφέρθηκαν ως εκεί. Έχει αποδειχθεί ότι τα περισσότερα προβλήματα PSE και DFD κρεάτων προήλθαν όχι τόσο από τη χρόνια στρεσαρισμένη εκτροφή των ζώων αλλά από αυτό το ελάχιστο (συγκριτικά με τον χρόνο εκτροφής τους) χρονικό διάστημα μεταφοράς προς το σφαγείο και αναμονής τους στον χώρο ανάπαυσης. Επομένως ότι επηρεάζει αρνητικά την ποιότητα και την ασφάλεια των σφάγιων κρεάτων, από την κατάλληλη μεταχείριση των ζώων στον χώρο εκτροφής τους, μέχρι και την ώρα της εκφόρτωσης τους στο σφαγείο, θα αναλυθεί σε αυτή την εργασία. | el |
| heal.abstract | The last years, the attention of the consumers is drawn increasingly about the overall process of meat, from the primary production to consumption and their concern about the welfare of animals and their quality of life. Welfare is defined as the ability of an animal to be in a good mental and physical health, while trying to adjust itself in a specific area, as well as the ability to express and behave freely and normally. For that reason, the producers try to take measures so as the living environment of the animals could be as much as possible comfortable and friendly for them. Another important area, where the welfare of the animals must be taken into account, is that of the abattoir and the resting area, as also the vehicle with which they were loaded and transferred. It is proved that most cases with PSE and DFD meat were not a result of a long stressed life but mostly of the minimum time they spend (in comparison with the amount of time they spend in the farm) while transferring the animals to the slaughterhouse and while waiting in the resting area before slaughter. As a result, every factor that affects the quality and safety of the carcasses, from the proper treatment of the animals in their housing to the time they are unloaded to the slaughterhouse, will be analyzed in this thesis. | en |
