| heal.abstract | Η ένταξη του αυγού στο διαιτολόγιο του ανθρώπου καταγράφεται από την αρχαιότητα, πριν από το 2.500 π.Χ., όταν, σύμφωνα με βιβλιογραφικές αναφορές, πραγματοποιήθηκε και η εξημέρωση της όρνιθας. Από τότε μέχρι και σήμερα, το αυγό, αποτελεί ένα σημαντικό και πολύτιμο μέρος της διατροφής του. Η αύξηση του πληθυσμού της Γης και η αστικοποίησή του, οι αλλαγές τον τρόπο ζωής, οι ολοένα αυξανόμενες απαιτήσεις του σύγχρονου καταναλωτή σε ποιοτικά προϊόντα, επηρέασαν την ορνιθοτροφία σε όλα τα στάδιά της. Ο τρόπος διάθεσης ομοίως των αυγών, ακολούθησε αντίστοιχη εξελικτική πορεία. Έτσι, σήμερα, υπάρχει πληθώρα συσκευασμένων αυγών, διαφορετικών προδιαγραφών και τιμών που μπορούν να καλύψουν τις ανάγκες ακόμα και του πιο απαιτητικού σύγχρονου καταναλωτή. Σκοπός της παρούσας εργασίας είναι η μελέτη, διερεύνηση και κατ επέκταση η καταγραφή της βιωσιμότητας των μονάδων παραγωγής αυγών στα Μέγαρα Αττικής, αφού πρώτα γίνεται μία αναφορά για τη θρεπτική και διατροφική αξία των αυγών και τα ω-3 αυγά, για τις μεθόδους εκτροφής των αυγοπαραγωγών ορνίθων, για την εμπορία των αυγών, για την τιμή τους και τους παράγοντες που την επηρεάζουν, καθώς και για τις Ελληνικές πτηνοτροφικές επιχειρήσεις. | el |
| heal.abstract | The inclusion of eggs in the human diet is recorded from antiquity, before 2,500 BC, when, according to bibliographic reports, the domestication of the hen took place. From then until today, the egg is an important and valuable part of our diet. The increase of the Earth's population and its urbanization, the changes of the way of life, the ever-increasing demands of the modern consumer in quality products, affected the poultry farming in all its stages. The way the eggs were disposed of in the same way followed a corresponding evolutionary course. So today, there is a plethora of packaged eggs, with different specifications and prices that can meet the needs of even the most demanding modern consumer.
