| heal.abstract | Στην παρούσα διατριβή μελετήθηκε η επίδραση των διαδικασιών καβουρδίσματος στα φυσικοχημικά χαρακτηριστικά της α’ ύλης, του ροφήματος και του κατακαθιού του Ελληνικού καφέ. Χρησιμοποιήθηκαν δύο δείγματα ξανθού και σκούρου καφέ με σχεδόν εξάμηνη διαφορά παραγωγής για λόγους επαναληψιμότητας. Ο ξανθός καφές κατεργάζεται για λιγότερο χρόνο και σε χαμηλότερη θερμοκρασία από τον σκούρο καφέ. Αρχικά προσδιορίστηκε η υγρασία και η πυκνότητα των ωμών κόκκων καφέ και έπειτα των ψημένων πριν την άλεση και βρέθηκε ότι η υγρασία μειώνεται περίπου 6-7 φορές κατά το ψήσιμο ενώ η πυκνότητα κατά 1 φορά. Στη συνέχεια στον αλεσμένο καφέ και τα προϊόντα του, εξετάστηκε το pH, η ογκομετρούμενη οξύτητα, το φαινολικό περιεχόμενο, η αντιοξειδωτική ικανότητα με τη μέθοδο DPPH, η θολερότητα, το χρώμα και το πτητικό προφίλ με την τεχνική της μικροεκχύλισης δια της στερεάς φάσης (Solid Phase Microextraction-SPME) σε συνδυασμό με αέρια χρωματογραφία-φασματοσκοπία μαζών (GC-MS). Επίσης έγινε προσδιορισμός ταννινών και καφεΐνης και τέλος οργανοληπτική εξέταση στο ρόφημα όπου εξετάστηκε το άρωμα, η γεύση, η υφή, η επίγευση, η πικρότητα και η στυφότητα. Και τα δύο ροφήματα παρουσίασαν παρόμοιες τιμές pH. Η α’ ύλη του ξανθού καφέ βρέθηκε να είναι ελαφρώς πιο όξινη από την α’ ύλη του σκούρου καφέ, το ίδιο και το κατακάθι. Τα αποτελέσματα έδειξαν πως η α’ ύλη, το ρόφημα και το κατακάθι του ξανθού καφέ ήταν πλουσιότερα σε πολυφαινόλες σε σύγκριση με τα αντίστοιχα του σκούρου καφέ. Η αντιοξειδωτική ικανότητα ήταν μεγαλύτερη στο κατακάθι, ακολούθησε η α’ ύλη και τελευταίο το ρόφημα. Επίσης παρατηρήθηκε ότι η αντιοξειδωτική ικανότητα ήταν μεγαλύτερη στα τρία προϊόντα του ξανθού καφέ από τα αντίστοιχα του σκούρου. Από τη μέτρηση θολερότητας, έγινε αντιληπτό ότι το ρόφημα ξανθού καφέ εμφάνισε αρκετά περισσότερα αιωρούμενα και αδιάλυτα σωματίδια και αυτό επιβεβαιώθηκε και κατά τη γευστική αξιολόγηση, εφόσον στο υπερκείμενο υγρό παρατηρήθηκε η παρουσία κόκκων. Από τη μέτρηση του χρώματος τεκμηριώθηκαν οι προσδιορισμοί «ξανθός» και «σκούρος». Στην α’ ύλη ξανθού καφέ απομονώθηκαν και ταυτοποιήθηκαν περίπου 54 πτητικές ενώσεις, ενώ στην α’ ύλη σκούρου καφέ περίπου 85 πτητικές ενώσεις. Στο ρόφημα ξανθού και σκούρου καφέ απομονώθηκαν και ταυτοποιήθηκαν συνολικά 28 και 39 ενώσεις αντίστοιχα. Ο σκούρος καφές ο οποίος έχει ψηθεί σε υψηλότερες θερμοκρασίες ήταν πιο πλούσιος αρωματικά. Επίσης όπως διαπιστώθηκε αριθμητικά, στο ρόφημα δε μεταφέρθηκαν όλες οι ενώσεις που υπήρχαν στην α’ ύλη. Αυτό πιθανόν οφείλεται είτε στο γεγονός ότι δεν εκχυλίστηκαν όλες στο νερό, είτε στο γεγονός ότι κάποιες μπορεί να καταστράφηκαν κατά το βρασμό. Τα αποτελέσματα για τον ξανθό καφέ έδειξαν ότι η α’ ύλη ήταν πιο πλούσια σε τανίνες. Για τον σκούρο, πιο πλούσιο σε τανίνη ήταν το κατακάθι. Επίσης παρατηρήθηκε ότι η α’ ύλη του ξανθού είναι πιο πλούσια από την α’ ύλη του σκούρου, το ρόφημα του σκούρου πιο πλούσιο από το ρόφημα του ξανθού και το κατακάθι του σκούρου πιο πλούσιο από το κατακάθι του ξανθού. Όσον αφορά την καφεΐνη, ο σκούρος καφές είχε μεγαλύτερη περιεκτικότητα από τον ξανθό. Αυτό το γεγονός παρατηρήθηκε στην α’ ύλη, στο ρόφημα και στο κατακάθι. Στην οργανοληπτική αξιολόγηση, η πλειοψηφία των συμμετεχόντων κατέδειξε ως 1ο στην επιλογή τους τόσο βαθμολογικά όσο και ως πιθανότητα επιλογής, τον σκούρο καφέ. | el |
| heal.abstract | The present thesis investigated the effect of roasting conditions on the physicochemical characteristics of the raw material, the beverage, and the coffee grounds of Greek coffee. Two batches of light-roasted and dark-roasted coffee, produced approximately six months apart, were analyzed to assess the repeatability of the results. Light-roasted coffee is processed for a shorter time and at a lower roasting temperature than dark-roasted coffee. Initially, the moisture content and density of green coffee beans were determined, followed by the analysis of roasted beans prior to grinding. The results showed that moisture content decreased approximately six- to seven-fold during roasting, while density was reduced by approximately two-fold. Subsequently, ground coffee and its products (brew and spent coffee grounds) were analyzed for pH, titratable acidity, total phenolic content, antioxidant activity using the DPPH assay, turbidity, color, and volatile profile by Solid Phase Microextraction coupled with Gas Chromatography–Mass Spectrometry (SPME–GC–MS). In addition, tannin and caffeine contents were determined. Finally, a sensory evaluation of the coffee beverage was conducted, assessing aroma, flavor, mouthfeel, aftertaste, bitterness, and astringency. Both coffee beverages exhibited similar pH values. However, the raw material of the light-roasted coffee was found to be slightly more acidic than that of the dark-roasted coffee, with a similar trend observed for the spent coffee grounds. The results demonstrated that the raw material, beverage, and spent coffee grounds of the light-roasted coffee contained higher levels of total phenolic compounds than the corresponding products of the dark-roasted coffee. Antioxidant activity was highest in the spent coffee grounds, followed by the raw material, while the beverage exhibited the lowest antioxidant activity. Furthermore, all three products of the light-roasted coffee showed greater antioxidant activity than their dark-roasted counterparts. Turbidity measurements revealed that the light-roasted coffee beverage contained a considerably higher amount of suspended and insoluble particles. This observation was confirmed during the sensory evaluation, as visible coffee particles were detected in the supernatant. Color measurements objectively confirmed the classification of the coffee samples as light-roasted and dark-roasted. Approximately 54 volatile compounds were isolated and identified in the raw material of the light-roasted coffee, whereas approximately 85 volatile compounds were identified in the raw material of the dark-roasted coffee. In the corresponding beverages, a total of 28 and 39 volatile compounds were identified in the light-roasted and dark-roasted coffee, respectively. The dark-roasted coffee, processed at higher roasting temperatures, exhibited a richer volatile aroma profile. Moreover, the results demonstrated that not all volatile compounds present in the raw material were transferred to the beverage. This may be attributed either to incomplete extraction into the brewing water or to the thermal degradation of certain compounds during boiling. Regarding tannin content, the raw material of the light-roasted coffee exhibited the highest concentration, whereas in the dark-roasted coffee the highest tannin content was observed in the spent coffee grounds. In addition, the raw material of the light-roasted coffee contained higher tannin levels than that of the dark-roasted coffee, whereas the beverage and spent coffee grounds of the dark-roasted coffee contained higher tannin levels than the corresponding fractions of the light-roasted coffee. Concerning caffeine, the dark-roasted coffee exhibited higher caffeine content than the light-roasted coffee in the raw material, the beverage, and the spent coffee grounds. The sensory evaluation indicated that the majority of the participants preferred the dark-roasted coffee, ranking it first both in terms of overall sensory scores and purchase preference. | en |
