| heal.abstract | Στην παρούσα πτυχιακή εργασία παρουσιάζεται η καλλιέργεια του κουνου-πιδιού στο νομό Ηλίας και η διαδικασία επεξεργασίας σε τουρσί . Το κου-νουπίδι (επιστ. Βρασσική η λαχανώδης ποικ. η βοτρύτης, Brassica oleracea var. botrytis) είναι φυτό ποώδες, μονοετές ή διετές και ανήκει στην οικογέ-νεια των Σταυρανθών και στο γένος Βρασσική (Brassica). Κατάγεται από τις χώρες της Ανατολικής Μεσογείου ενώ αναφορές υπάρχουν και στην Αρ-χαία Ελλάδα και Αίγυπτο. Παρουσιάζεται η καλλιεργητική πορεία του κου-νουπιδιού όπου αναλύεται το κουνουπίδι που καλλιεργείται τη χειμερινή περίοδο κυρίως στον νομό Ευβοίας. Επιπλέον αναλύονται οι ασθένειες, η λίπανση και η συγκομιδή. Τέλος παρουσιάζεται αναλυτικά η διαδικασία πα-ρασκευής του κουνουπιδιού σε τουρσί. | el |
| heal.abstract | This thesis presents the cultivation of cauliflower in the county of Elias and its processing into pickles. Brassica oleracea var. botrytis) is a herbaceous, annual or biennial plant belonging to the crucifer family and the genus Bras-sica. It originates from the countries of the Eastern Mediterranean and there are references to it in Ancient Greece and Egypt. The cultural history of cau-liflower is presented, where the cauliflower cultivated in the winter season mainly in the county of Evia is analyzed. In addition, diseases, fertilization, and harvesting are analyzed. Finally, the process of preparing cauliflower in pickled form is presented in detail. | en |
